Kristina Marinkovich, the author of the cookbook H.E.A.L.T.H.Y. Eats, shares a recipe for “Healthy” Chocolate Chip Cookies and Zucchini Mini Pizzas.
“Healthy” Chocolate Chip Cookies
2 ripe bananas
1 c quick oats
1 Tbsp (heaping) nut butter
½ c vegan chocolate chips (optional)
Preheat oven to 350*. Mash bananas in a bowl with a fork. The riper the banana, the easier they mash! Add quick oats and nut butter to bananas and mix. “Dough” will be very sticky. Mix in chocolate chips if desired. Drop dough into 1” spoon fulls on to cookie sheet. Bake 10-12 minutes until the bottoms are golden brown.
Zucchini Mini Pizzas
1 ripe zucchini
1c. diced tomatoes
½ c. shredded mozzarella cheese
mini pepperoni (optional)
Preheat oven to 400*. Slice zucchini into ¼ in rounds. Line baking sheet with aluminum foil and spray with nonstick cooking spray. Line tray with zucchini slices. Top each slice with diced tomatoes followed by shredded cheese and pepperoni if desired. Bake for 15-20 minutes until zucchini can be pierced with a fork. The thicker the zucchini slice, the longer it will need to bake. Enjoy!
